Of Cheeses, Apples, Pies & Cakes

So here’s an update on the things I had planned to post about. Mostly on the food I had baked at home. I will say though that I have a huge room for improvement seeing where I am at being a "cook" or would you rather call me, a "baker" haha.

Anyway, I’ve been putting off updating… yes, yes, I know, that habit coming back. So without wasting any more words, here are some of the stuff I made over the vacation period (at home of course).

Apple Cobbler
Okay, this is by far one of the most successful food item I have baked that I am very happy about with the outcome in terms of taste and texture overall. The top crust came out wonderful and tasted really good, while the filling is just mm umm, great. I had no idea it would come out really good that I actually liked it.

See, usually I tend not to like the food I bake or cook. Sometimes I would go as far as just tasting the food and not eat it. I guess I am somewhat those type of people who cooks and not eat their own cooking. Anyway, for this dish, I loved it and I had multiple servings when it was freshly out from the oven. That was definitely the best time to eat it. All yummy and hot and fresh and yummy. Haha, yes I really liked it.

Okay enough rambling on how much I loved this dish. I’ve got some photos to add.

Okay I may have made a crazy mistake at the center opening. Okay so I cut an X in the center right, and I was supposed to fold the flaps outwards. Instead of doing that, I folded them inwards so thus it looks slightly odd there. But the taste was there, so I’m still quite happy about this dish. I’m sure with more practice I can get it all perfect.

Cheesecake Brownies
This was a recipe Salwa had introduced to me. It’s a brownie with cream cheese! Is the sound of that salivating your mouths already? Well this was equally simple to do compared to regular brownies. This one just has added ingredients of cream cheese.

Now some may like the taste of cream cheese and may also love brownies. Then I would say try baking this one. You’d just love it.

But as for some people like me, not that crazy about cream cheese PLUS I’m still sick of brownies (after I had to microteach a practical lesson on brownies – the practicing and testing before that was enough for me) so…. that makes me not such a big fan of this recipe.

But that’s just me, so you shouldn’t listen to me. Most times, I don’t like eating what I cook or bake, others at home seem to enjoy them though. Same for this, the humans at home with me seem to like this cheesey brownie.

They look pretty good to me. And I think you can quite see how cheesey it was, haha. But I would also admit that the chocolate brownie part was pretty good also. Not bad, this recipe.

Chocolate Swirl Cheesecake
I’ve made cheesecakes before but they were always the same, plain, boring ones. Yes yes, I like baking chocolate cheesey food items but I don’t really like eating them. I like the process of making it but not consuming it, haha.

This cheesecake was again, similar to any other cheesecake recipes, only thing different was that there was melted chocolate swirled in the cheesecake mixture. However, I think I had swirled the melted chocolate in too much that it was more like mixing into the mixture… no swirls seen of course. That was my mistake. I do plan to do this again some time in the future to perfect it. I’ve so much more to work on really.

Again, it’s a cheesey food item so I didn’t quite like the taste but it tasted how it was supposed to and when I couldn’t finish even half a slice, my brother could down 2 slices at one time. Haha, yes, so you see what I mean?

Peanut Butter Cookies
Not that long ago, my mother and niece went for a picnic and and overnight camping at the beach with my relatives. So I thought, it’d be nice if I could bake them some cookies to bring along there. Perhaps even share it among the others and I ended up making plenty enough for everyone there and at home.

I was sick of chocolate cookies, haha. So that’s when I decided to make peanut butter cookies instead since I had a lot of peanut butter at home.

These were very crunchy cookies, not the soft ones though. I haven’t exactly mastered that well, I’ve tried but I just felt that something was missing. I’ll try again with soft cookies.

Anyway, these were not bad at all. I actually liked them. I would say? That I prefer these cookies over chocolate chip cookies. But I did add some chocolate chips to half the cookies because my niece requested for that.

When my mother came back home, she told me that the all loved my cookies and my cousin who’s getting married soon really liked it. They teased him asking if he wanted to order cookies from me, haha. It’s nice to think that people like what you bake and want you to bake for them again. But I wouldn’t want to venture into that sort of thing for now. Teaching is my next step, anything else may come another time. I’m not that great at having too many things happening in my life at once.. somewhat chaotic.

Peanut Butter Chocolate Chip Cookies

Well that basically sums it up for this posting. I may have more to post up but I would need to gather some inspiration to do so. It’s hard to write and not have inspiration or something to say? There’s no purpose in writing and that would bore readers, though I know I don’t really have that many readers.

Anyway, I’ll have to get my stuff ready to head down to the secondary school to collect some items.
